De Bortoli are fanatics about their viticultural practices and sustainable environmental systems. Care and devoted nurture in the vineyards, combined with rigorous fruit pruning, maintains the health of the vines and encourages good flavour profiles in the grapes. Parcels of Merlot and Cabernet are earmarked purely on the basis of health and distinct varietal character, harvested to a schedule determined solely on the complete ripening of grapes. A vinification in controlled fermenters at warmer temperatures of 20C to 22C over the course of a week brings optimal extraction of flavours and good colour while retaining soft tannins. Alcohol 13.5%
