At Sacred Hill the focus is on careful site selection, maturity of vines and high input viticulture with a move towards biological farming principles. There is also increasing awareness about the importance of stylish new blends and the consistency of multi regional wines. Minimal interference is the ultimate philosophy, allowing the wine to express it's natural self. Choice parcels of Chardonnay and Colombard are harvested in excellent condition, separately pressed to retain bright varietal fruit character. The juices are treated to a cool vinification in chilled fermenters, held for a term on sedimentery yeast lees to build creaminess and impart texture, clarified and bottled, completely unwooded and unoaked.
