Traminer and Riesling are chosen for their vibrant varietal characteristics and capacity to assimilate into a harmonious wine. Parcels of Traminer are selected for spicy musk, floral and rose petal flavours which can combine with the floral and citrus characters of Riesling. Choice yeasts which can enhance the lively fragrant character of the wine are essential to the style. Each parcel is fermented separately at cooler temperatures between 12C and 14C over the course of a fortnight, retaining lively fruit flavours and freshness. Upon completion, batches are assembled, clarified and stabilised prior to final filtration and bottling. Alcohol 12.5%
