De Bortoli will always be at the fore of sustainable and environmentally sound viticulture. The philosophy being that great wine begins in the vineyard and that the winemaker should use minimal handling or interference. Wine should have a sense of place and be an expression of the soil. Consideration is given to those vineyards which can best display the qualities characteristic of Sacred Hill, healthy berries profiling vibrant, fresh melon and stonefruit. Chardonnay is fermented over the course of a fortnight at temperatures between 12C and 14C, some parcels are vinified on fine French oak. Upon completion, parcels are racked off gross solids and rested on fine yeast lees to build structure. Alcohol 13.0%
