When Grange creator Max Schubert returned from Bordeaux in the 1940s, his mind was on Cabernet. The project he laboured on for many years was to achieve the nation's greatest wine, Grange was the cover name and Cabernet was the subject of his evolving trials. To this day, Bin 707 can only be made in good vintages. An assemblage in 2009 of fruit from Coonawarra and the Barossa, Wrattonbully and Padthaway. The long and late southeast harvest was particularly conducive to excellent flavour development for Cabernet Sauvignon. The finished Bin 707 was matured thirteen months in a selection of completely new American oak hogsheads. Alcohol 14.5%
