Everything about Bin 707 is done on an expansive scale in a big way. The winemaking team seek parcels of Cabernet grapes, endowed with a concentration of flavour without peer. The tannins must be polished and clean, textural and refined. Vinification is meticulous. Following completion of barrel ferments and a course of malolactic, components are treated to a luxurious thirteen months maturation in completely new American oak hogsheads.
