Paxton focus on soil health, bio-diversity and nonchemical weed control. Bee hives on the property contribute to diversity, aid pollination and maximise seed production of the inter-row pastures. Natural composts enrich the soils and are the basis for healthy vine growth. Each vineyard parcel is separately handled, destemmed and vinified in a mix of open and static fermenters, plunged and pumped over each twice daily over the course of a fortnight for optimal extraction of colour, flavour and tannin. Batches are pressed into a selection of seasoned and new French and American oak barriques for completion of ferments and a year's maturation.
