Essentially an exclusive single small vineyard Shiraz, Emily is co fermented with a portion of well integrated Cabernet Franc, perhaps the only wine of it's kind in the world. Emily's Paddock is a mere three hectares of Shiraz, which grow alongside a parcel of Cabernet Franc, yielding about two tonnes per hectare, a scant and precious fourteen hectolitres. Organically grown grapes are picked by hand, completely de-stemmed and treated to an extended maceration for several weeks, with minimal intervention to express the paddock's uniqueness in the finished wine. Emily is then transferred into a selection of small French oak barriques, without any racking, fining or filtration for maturation.
