One of Bendigo's salient marques, a wine of extraordinary personality, built around the prominent tannins of Cabernet Sauvignon, cushioned by the plummy softness from a smaller component of resplendent Merlot. The philosophy at Blackjack is to not interfere with the vinification, in a sense, to let the grapes and vintage do the talking. The overall character is determined by a unique combination of season and environment. A medium weighted, complex dry red with essential varietal definition and seamless fusion between fruit, tannins and oak. Blackjack vineyards are just south of Bendigo at the foothills of Mt Alexander, within the renowned orchard pastorals of Harcourt Valley. The climes are fortuitously cool, perfect for slow ripening and the complete development of intense flavour in wine grapes. Traditional open top fermenters and good old fashioned hand plunging are essential, making wine at Blackjack is hard yakka but it's a labour of love. American oak is the material of choice, fruit is vinified in traditional open fermenters, hand plunged and aged in the best 225L barriques for two years, no finings and minimal filtration are applied at bottling.
TASTING NOTESGarnet colour. Fully fragrant with blackberries and dusty cigarbox aromas, black olive and dried herbs alongside blackcurrant and red berry. A medium weight palate with sweet, clear cassis fruit, concentrated over a muscular framework and substantial tannin length, before a firm, fleshy finish. A fist of fruit inside a velvet glove, perfect alongside succulent roasts or tender pink lamb. |
