Choice grapes from exceptional sites have been vinified into a profound wine of oak barrel ferment richness and fragrant custard spice, grapefruits and fig over a framework of delicately integrated quality French oak.

The aim is to make wines that express the high quality of fruit and which strike the balance between flavour and structure. A balance of semi turbid and very turbid juices are wild fermented in a mix of seasoned and new French oak puncheons and barriques, followed by ten months repose in barrel.
