The dozen or so hectares of Les Lys on the left bank of River Serein, are a delineation within the much larger appellation of Les Vaillons. Domaine William Fevre manages a precious single hectare of Les Lys, conspicuous for its traditions of being private property of the Roi himself. Planted to rich clay soils within a unique mesoclime, the fruit here yields a rather more delicate and refined style of Chablis.

TASTING NOTES

Pale yellow hues. A very fine bouquet, combining fruity and floral notes supported by graceful mineral notes. A soft, elegant palate, linear and pure, layered with charming and elegant fruit characters, minerality and textural richness in support of crisp orchard flavours, nashi and granny smith. A clean, aromatic finish of pebble stone and meal.
