KBS vineyard is lyre trellised which opens up the canopy, this combined with its easterly aspect ensures that the vines capture maximum sunlight. Hand picked grapes are destemmed and vinified in small open fermenters, hand plunged through fifteen days maceration before transfer to new and prior use French oak barriques for malolactic. KBS is allowed to mature with minimal intervention for an extended term before being racked and bottled the following winter.
