Sauvignon Blanc from the Deanery and Martin Hill Vineyard are supplemented by superb harvests from Lobethal and Piccadilly. After de-stemming and crushing, the chilled must, skins, seed and juices are pressed. Cold juices flow away to tank and are ettled by gravity into insulated tanks before racking onto Petaluma's chosen yeasts for vinification. The wine was fermented cool, 12C to 15C until very near complete dryness, achieving the correct balance of fruit and acid that gives Bridgewater Mill it's style and mouth watering freshness. The finished wine was cold settled to clarity before racking and a gentle filtration to bottle, capturing all the fragile, vibrant Sauvignon Blanc characters.
