Originally destined to be labelled and branded by a notable Adelaide Hills estate, Sauvignon Blanc is sourced from good vineyards at Woodside. Grapes are hand selected and picked throughout the early hours of morning to enhance flavour and minimise oxidation. Whole bunches are destemmed in small batches, without crushing and gently pressed. The free run juices are fermented to dry, individual parcels are trialled and tested for suitability, those most worthy for inclusion are assembled into the finished wine, to be bottled immediately after vinification, retaining the essence of Sauvignon Blanc grown to the cool ripening, high altitude Adelaide Hills.
