Tempus Two are not just about good wine, their headquarters in Hunter Valley are an ongoing cultural exchange, an amphitheater for live music and centre for the arts. Harvests from good vineyards, trained to yield Chardonnay specifically for sparkling wine, are whole bunch pressed for the gentle extraction of juices, vinified and rested for two months on sedimentery yeast lees to infuse the palate, followed by partial malolactic. Crafted to the traditional Charmat sparkling vinification technique, components are treated to a secondary fermentation to achieve a fine effervescence, retain primary fruit character and capture all the vibrancy of the delectable Chardonnay Blanc de Blancs style.
