As the substantial inventory of De Bortoli estate and private grower vineyards continue to mature and to evolve their own individual character, many of these special sites, twenty years of age and older, are yielding unique and distinctive wines which articulate the expression of vineyard and terroir. Choice harvests which can demonstrate the affinity to be assembled into a Villages style of Yarra Valley wine, are co-vinified into a vital, unoaked Chardonnay of wild yeast battonage complexity and barrel ferment richness.
A collation of parcels sourced from a qabal of De Bortoli client growers, the eminent Viggers vineyard, Abbey and Lusatia Park, Martins and Emu, assembled around a solid backbone of sections A7, B2 and B4, estate grown Chardonnay. The Martins property is planted to French clones Bernard 96 and 76. Lusatia Park at Woori Yallock, yields a quality of Chardonnay that's always steely, chilled and superfine. All fruit is hand picked, whole bunch crushed, pressed and settled overnight. The clear juices are racked to French oak casks for a wild indigenous yeast fermentation and full malolactic. Lees are stirred in the late autumn and winter, to be followed by a spell of rest and assemblage in spring.
TASTING NOTES
Light straw hue with a green edge. Citrus florals, struck match and nutty oak, minerality and distinctly fine Chardonnay character. Gently textured palate, savoury and chalky phenolics, hints of raw and grilled nuts, expressions of wilderness and white game. An evolving finish with lees complexity and vanilla char, making Villages a suitable accompaniement to a well prepared, freshly grilled octopus.
