An exciting style, vinified from a complex cepage of varietal grapes by the ever progressive Windy Peak. The crispness of Sauvignon Blanc is toned down by the warming stonefruit flavours of Pinot Grigio and dry flintyness of Semillon. The mix is further revved up by some Sardininan savouriness and zest, courtesy of a splash Vermentino. Match Windy Peak with pasta and shellfish, a Vietnamese pho or marinated and barbequed rosemary quail.

Fruit is selected from Victorian vineyards which can yield the quality of fruit worthy for Windy Peak. The Sauvignon Blanc and Pinot Grigio are sourced predominantly from the Yarra and King Valleys. Fruit is hand and machine harvested depending on the variety of grape and aspect of the individual vineyard site. Pressing of the grapes is very delicate, the intention being the achievement of rthe most refined base wines. The varietals are fermented separately and assembled after vinification to construct the defintive, classically fruit driven dry white style. Alcohol 12.0%
