Vintage 2005 for the Country Selection Chardonnay brought sensational ripeness and good acid balance to the grapes, from a season characterised by cool and moderate conditions in February to April. Small parcels of refined, delicate Mount Gambier and generous, tightly structured Adelaide Hills fruit were included in the blend to compliment the elegant, fine citrus flavours derived from the Coonawarra fruit. The Coonawarra Chardonnay parcels were picked early to retain the delicate regional varietal citrus flavours, tight structure and good length.

Jamiesons Run moderated the excess vine growth for this wine, maintaining the balance of fruit and leaf growth. Chardonnay was harvested during the cool of the night, crushed and gently pressed off the skins using an air-bag press. The juice was then racked and the ferment initiated in stainless steel before being transferred into the finest quality new and one-two year old French oak barriques to complete fermentation. After the short maturation the winemakers carefully selected barrels for the final blend to create a finished wine that was fine, elegant and subtle with delicate oak influence and malolatic fermentation character.
