Long established expertise in viticultural practices and a vigorous planting program have been implemented at the Cockatoo Ridge vineyards, whilst the steady growth in demand for this popular sparkler has been met by the sourcing of premium grapes from growers who are contracted to meet strict quality standards. Bottle fermentation and a handsome resting on lees provides both the natural effervescence and the soft, creaminess desirable in sparkling wine.
