Pinot Noir grapes must reach optimal maturity before the decision is made to harvest. Blocks are selected and picked to maximise flavour. A lot of vineyard sorting and thinning ensures that quality fruit arrives at the winery. Some vines must be picked manually, a small percentage of the hand harvested parcels are earmarked for whole bunch inclusion. A combination of winemaking techniques are employed to create a finished wine with complexity and balance. These include cold maceration, inclusion of whole bunches and warm fermentation at 30ËšC to 32ËšC. Components remain separate until assemblage, a partial maturation in oak casks introduces complexity while retaining freshness. Alcohol 13.0%
