The Grampians are notorious for drought conditions which take a very firm grip on the vines, giving them a shakedown of any water they might have and concentrating the flavours. Many of the vines are grown to higher altitudes, cold air tumbles down the mountains and chills the fruit throughout the ripening. Harvests of Shiraz exhibiting strong spice and pepper characters are set aside for Billi Billi. Grapes are treated to a cold soak on skins for a fortnight, inoculated to yeast strains Maurivin B and 796 for eight days vinification in traditional open top fermenters, hand plunged and transferred to a selection of new and seasoned French and American oak barriques for a year's maturation.
