Montage are stylish wines crafted at the De Bortoli wineworks in Bilbul on the Riverina. The wide expanse of estate vineyards here grow some of Australia's richest, most intensely flavoured fruit, innately suitable to fine Cabernet Merlot. The warm sunny days of the Riverina yield robust red grapes with complimenting tannins which translate into wines of mouthfilling palates and smooth textures. Fruit is selected by the winemakers and picked when both flavour profiles and baumes are at their highest. The Cabernet spends seven day on skins at 27C to 30C. The Merlot component spent five to seven days on skins at slightly lower temperatures, 20 to 24C. Aged in a combination of French and American oak.
