The history of the Burge family and their long association with winemaking can be traced back to 1855. Throughout his career, Grant has been one of the most respected and innovative forces in the Australian wine industry. Moscato grapes are crushed and destemmed, the juices are cold settled and inoculated with neutral yeast to retain natural fruit characters. A vinification process is carried out at cool temperatures under ten degrees over a period of three weeks, at which point ferments are arrested to retain natural grape sugars.The wine is refreshingly low in alcohol, bottled early and under low temperatures to retain the natural carbon dioxide which appears in the wine as subtle elegant bubbles.
