Winemaking techniques very much depend on the style one is trying to achieve. At De Bortoli a hands on approach in the vineyard and hands off philosopy throughout the vinification allows the quality of fruit and expression of terroir to be fully represented. Traditional and modern vinification techniques are employed to achieve a vivacious sparkling Cuvee. De Bortoli select fruit from vines planted to the bountiful soils of the Riverina, sheltered by generous canopies which allow grapes to ripen gently and naturally. The fruit is picked, pressed and allowed to settle naturally before being filtered. The wine is fermented cold in temperature controlled tanks to retain all the natural fresh fruit characters.
