Such is Jean Pierre. De Bortoli select their choice of fruit from an impressive roll call of choice vineyards which are planted to some of the most fortuitous soils in Australia. Generous canopies are fastidiously maintained to maintain the conditions which allow the fruit to ripen fully but gently. Grapes are harvested and pressed before a period of settling followed by filtration. Inoculated to select yeasts, the juices are treated to a cold vinification in temperature controlled fermenters to retain all the natural fresh fruit characters. Approx 11.0%
