An effervescent accord between the softness of Barossa Valley Chardonnay and masculine structure of Adelaide Hills Pinot Noir. Treated to the timeless Methode Traditionelle, fermented in own bottle and reposed for an extended term on fine sedimentery yeast lees, its exquisite, creamy mousse presages an overture of cherry, biscuit and boulangerie citron confit characters, a moreish palate which continues to unravel creamy layers of complexity, but at her heart, she is clean, revitalizing and crisp.
TASTING NOTESPale straw hues, a persistent fine bead. Creamy beginning to the nose, honey notes, nougat, aromas of shortbread and red Pinot berry fruits. Layers of fresh lime and preserved lemons, crisp fresh fruit flavours of green apples and lemon puff citrus, a bright acid frame, delicate structure throughout the palate, generosity, balance and style, Schild finishes refreshing, long and clean. |
