Pasqua take the pick of fruit from the choicest Abruzzo vineyards and match the quality of harvest with a minimalist vinification aimed at retaining the character and charm. Parcels of Montepulciano grapes are harvested off choice sites, planted to calcareous clay soils astride the most scenic, undulating landscapes of Abruzzo. Batches are crushed and treated to a period of cold maceration for optimal extractions of colour and tannin, followed by a traditional vinification at 25C to 28C, regularly plunged and pumped over in controlled fermenters. Upon completion, components are sent for a course of malolactic, rackings for clarification and term of bottle age.
