The ancient Romans made no secret that their success was due to a merciless use of power. In furtherance of their aim to sire generations of ruthless warriors and entrepreneurs, they taught their youth the myth of twins who established a city state. Remus was the sophisticated one and Romulus was a brute. Romulus slayed his gentler brother and gave his name to a great empire. Harvests of old vine Shiraz are assembled, from splendid sites eighty years of age and more, in the premiere viticultural precincts of Moppa and Light Pass. Grapes are all hand picked, destemmed and crushed into small, open top ½ tonnes fermenters. A variety of vinification techniques are employed, unique to each parcel, to create layers of flavour and complexity. Batches are hand plunged daily, for gentle extraction of colour, flavour and tannin. After an extended term on skins, ferments are pressed to a selection of predominately new American oak hogsheads for completion, a course of malolactic and twenty months maturation. Components are assembled and bottled without fitration.
