Andreas Weiman was one of Polish Hill River's earliest settlers, he established a block of Riesling vines atop the choicest terroirs on the the Paulett estate property. He named the site Antonina, after his daughter. Today, the limited yields are crafted into a single vineyard selection, which yield what the Paulett winemaking team consider to be their very finest Riesling. Unpretentious and elegant, restrained power and a wonderful spectrum of citrus flavours throughout. A large part of the Paulett estate was destroyed by Ash Wednesday bushfires. Nevertheless, a significant planting of Riesling vines, well over thirty years of age remain, a treasured resource which makes up the backbone of the icon Antonina, named for the Paulett's affinity to the original settler's family. The choicest bunches are hand picked into 6kg buckets, transferred individually to the winery and placed gently into a bag press without rendering any juices.The lightest pressure is applied once the press is full, an exclusive free run juice that's reserved for Antonina. Batches are cold settled to remove solids before a slow and even vinification to select yeasts over the course of three weeks.
TASTING NOTESPale straw with green hues. Fine spice, apple and mineral aromas, limes and apples, zest and complexity, then stunning, delicate floral notes. Subtle citrus and lime with mineral overtones to the bouquet. Intense, bright and firm, expressions of lime and chalk which melt onto an underbed of mineral and slate. Fine and lively palate with great length and depth of flavour exhibiting lemon and lime zest, finishing with a crisp acidity. |
