Harvests from two distinct terroirs are assembled into a wine of elegant seamlessness and astonishing balance. Determining optimal time of picking is essential, only time spent amongst the vines can capture the balance between complete tannin ripeness and juicy acidity. Grapes are all harvested by hand and destemmed, crushed through a chiller and treated to three days of cold soak before inoculation to choice yeasts. Following a short term of vinification on skins at warmer temperatures, batches are pressed off for completion of ferments and racked off gross lees into a selection of seasoned French oak barriques for fifteen months maturation.
