Deen De Bortoli had always enjoyed the famous noble rot styles of Europe and wanted to make his own. He believed that the conditions in Griffith were favourable to the experiment. Riverina autumns often see long, dry, warm days interspersed with a sprinkling of showers and heavy morning dews, ideal for producing Botrytised grapes. Semillon is picked off vineyards which have been the source of Noble One for many years, remarkable for their consistency to achieve a balance of sweetness, clean acids and luscious flavour. Each parcel is separately harvested and vinified over the course of one to three months, most components are treated to a term of maturation in French oak barriques.
