Fruit is harvested from vines on the Waimea Plains, planted to Moutere clay and free draining, stony alluvial soils. Sauvignon Blanc grown here achieves classic varietal flavours and bright, virile bouquets. Bunches are crushed, inoculated to choice yeasts and treated to a cool, temperature controlled vinification to preserve freshness and retain essential fruit characters.
