Whilst the Riverina is idyllic for maintaining healthy vines, climes can have an impact on crop size, the smaller berry sizes and reduced bunch weights translate into fruit with excellent colour and flavour intensity. Grapes are harvested throughout the cool of night to preserve fresh fruit flavours. Following a crush through the McWilliam drainers, the best free run juice is collected and allowed to settle. Each parcel of Chardonnay is kept separate and treated individually until the final assemblage. A component is vinified in contact with French oak, another is treated to malolactic fermentation, adding depth and complexity to the finished wine. Matured on yeast lees to soften the wine and add palate weight.
