A fully approachable Cabernet wine of attractive fruit flavours and soft, ripe tannins to be enjoyed today alongside your favourite faire. Rigorous assessment of vineyards is essential to identify the fruit style suitable for Bin 444. Prior to harvest, careful monitoring of the sites are undertaken by the winemakers to assess flavour development and sugar accumulation. The decision to harvest is always based on flavour intensity and varietal character. Drinking beautifully upon release, ideally alongside scotch eggs and shaved truffle over wide ribbon noodles.
Grapes are destemmed, crushed to static and rotary fermenters and inoculated with choice yeasts. The free run juices are kept separate from pressings. The temperature range throughout vinification is maintained between 20C and 28C for a duration of ten to fifteen days. Fermenters are pumped over twice every twenty four hours to irrigate the grape skin cap, thus liberating the rich colour and fruit flavour while extracting a fine balance of tannins. Vinified to achieve a generosity of mouthfeel and provide supportive tannin structure, the choicest parcels are matured in a selection of French and American oak hogsheads prior to assembly, stabilising and filtration. TASTING NOTES
Deep crimson red with vibrant purple hues. Distinctive ripe blackcurrant, plum and dried herb aromas supported by a subtle savoury and spicy oak background. Medium to full bodied in style with ripe blackcurrant and plum Cabernet flavours combined with delicate chocolate /smoky oak. Grape and oak tannins are harmonised to provide a lingering, but soft, structured finish.
