The Four Sisters are a joint venture between Trevor Mast of Mount Langi Ghiran and Alistair Purbrick of Chateau Tahbilk. Purbrick contributed the quality of fruit, to which Mast applied the style of winemaking which have established all three holdings as hugely successful labels. The Four Sisters represent Sparkling of the highest order, an effervescent
Cuvée of immense flavour and zing. The cherry berryness of Pinot Noir are distinct, harmonizing beautifully and adding weight to the golden, peachyness of Chardonnay.
Fashioned from the pick of Chardonnay and Pinot fruit, collated off the finest Victorian vineyards, fruit is harvested throughout the chill of night to retain crisp aromatics. On arrival at the winery, parcels are gently crushed and pressed to minimise phenolics for optimal delicacy. Components complete full malolactic and remain on lees until assemblage. The final Cuvée is treated to a final fermentation in bottle on tirage lees, achieving excellent, creamy moussei while nfusing wonderful yeasty complexity in the finished wine.
TASTING NOTESPale straw, effervescent with a persistent bead. The nose displays a hint of yeast, refreshing citrus aromas, candied citrus peel and warm biscuit notes. The palate is strongly fruit driven, developing into light strawberry and cherry fruit characters, bright red apples and peach, creamy textures, poised and elegantly soft. An excellent choice to fine bistro faire, or as aperitif to delight good company.
