Established by mother company Moet Chandon in the 1980s, with a view to setting the standard for Australia's finest sparkling, Domaine Chandon can now draw fruit from a host of vineyards to make the most exquisitely balanced, satisfying and approachable effervescent wines. Enter a limited edition of Summer Brut to delight all five senses, crafted in full Methode traditionnelle, to drink beautifully throughout the year, chicly attired in her festive season best.
Domaine Chandon source harvests of Chardonnay and Pinot Noir from vineyards which are trained to yield fruit specifically for Sparkling Brut. Parcels are separately inoculated in controlled fermenters, a third of the batches are treated to secondary malolactic ferments. Up to eighty individual components are assembled, including a reserve of one to three year old wines, before initiating a further course of vinification. Fifteen to eighteen months rest on yeast lees infuses the wine with creamy fruit flavours and aromatic richness. Individual bottles are then subject to a regimen of riddling and disgorgement, followed by a dosage liqueur to introduce the sparkle, the final seal and a term of bottle age.
TASTING NOTES
Straw yellow hue, a fine persistent bead. Fresh and bright bouquet, citrus blossom, subtle pear and white nectarine over savoury noters of roasted nut and delicate spice. The palate entry is soft with generous primary fruit characters, followed by a creamy textural mid palate offering nougat and nectarine flavours which persist on a lingering, clean and crisp Brut finish.
