The higher altitudes and slower ripening climes of King Valley are a blessing to wine growers. Some of the more fortuitous sites boast soils and aspects which are nothing short of idyllic, yielding harvests of vibrant Cabernet Sauvignon. Gracebrook's Terra rossa Stables Vineyard has been producing high quality, classic cool climate Cabernet wines since inaugural release. Fully fragrant with engaging bouquets and a mouth filling palate, the inaugural vintage burst out of the stable to claim gold medal at the hotly contested Cowra Wine Show.
The Stables Cabernet Block stands in front of Gracebrook's cellar door on an overlay of Terra rossa volcanic red basalt soils. This choice site comprises some twelve acres of vines divided into two separate irrigation blocks to cater for the varying depth of basalt soils. Each parcel of fruit is critically assessed before harvest. Patiently waiting for the correct balance of acids and pH, sugar, flavours and ripeness to ensure an optimal quality of fruit is received at the winery. Gracebrook go to great lengths to minimize handling throughout vinification and to see that the wine completes fermentation with as little interference as possible. Matured in a selection of tightly grained French oak barrels for a year.
TASTING NOTES
Dark attractive red colour. Strong vanillin oak fragrance with overtones of ripe berry fruits lead to a balanced wine with soft delicate herbal tannins. A tightly focused palate with persistent bramble fruits and assertive tannins leads onto a finish that lingers long, satisfying and clean. Aged in French oak for twelve months before a further spell of ageing in bottle, Gracebrook is crafted to drink beautifully immediately upon release.

About the Gracebrook Winery
The Gracebrook brand has evolved from the passion David and Rhonda Maples have for the land and what it has to offer
David and Rhonda acquired very early in life the horticultural skills that would later become invaluable when applied to the vineyards of Gracebrook. Both being from farming backgrounds, Rhonda's parents owned and operated a dairy farm here in the King Valley, across the road from what is now their home farm. During Rhonda's holidays and weekends she would work in the local vineyards, either handpicking fruit or pruning vines. David's parents also owned and ran dairy farms as well as growing beef cattle, pigs and later on growing tobacco on a small farm located at Edi.
