One reason Brian Stonier founded his winery and planted vineyards was his love of Champagne. He originally established his now famous Pinot Noir vines to craft a luxury sparkling wine. Stonier Sparkling articulates the cool and maritime growing conditions of the Stonier vineyards at Mornington. Exhibiting heady aromatics, heightened flavour profiles of nuts and baked yeasts, with a fine effervescence, Cuvee Stonier expresses fine masculine fruit, in particular from the major component of Pinot Noir grown to cooler sites.
Fruit is harvested early in the vintage to retain the natural acidity essential for quality sparkling wines. A higher proportion of Pinot Noir is picked and included into the Cuvee to maintain the richness of the wine, whilst a much smaller component of Chardonnay brings elegance and finesse to the final blend. Grapes are all hand picked into small containers to avoid any unwanted maceration of skins, chilled overnight and treated to a gentle press. Batches are vinified without delay to retain fresh fruit characters. After eighteen months repose on lees within own bottle, the balance of autolysis characters have melded perfectly with the fruit, Stonier is disgorged and doseaged in true methode traditionelle.
TASTING NOTES
Pale straw gold, steady bead, persistent and fine. Crême brulee and grilled almond notes, fresh cooked biscotti derived from the yeast autolysis, aromas of peach and of strawberries. A mouthfilling mousse, the palate shows the rich Pinot fruit characters of cream and strawberry, the enticing flavours of the bouquet are reflected onto the palate, exemplary mouthfeel and flavour profiles delivered with finesse and exceptional styling.

In 1978, Brian Stonier and his wife Noel established the Stonier vineyard in the coastal town of Merricks, one hour southeast of Melbourne, ten minutes from the challenging surf beaches of Bass Straight
