Stephen Henschke and wife Prue uphold the family name and reputation, as chief winemaker and viticulturist respectively. The highly revered Hill of Grace represents the pinnacle of Australian single vineyard wine. Prue's meticulous viticultural management has breathed life into the venerable old vines. A mulch of wheat straw is applied to retain soil moisture, build up organic matter and inhibit weed growth. The grapes are picked early to mid April at a sugar level of around 24 Brix. There's always a good acid/pH balance from this vineyard and the anthocyanins in the berries are very high, all contributing to the unique quality at Hill of Grace.
