Hand picked Shiraz from the vineyards surrounding Hundred Tree Homestead on Sally's Hill, including parcels from the famous Sally's Paddock. An exceptional Shiraz wine reflecting the wonderfully idiosyncratic flavours of Sally's Hill fruit and unique style of Redbank. Made in small batches, wild yeast fermented, hand punched and basket pressed, Sally's Hill truly expresses the potential of a pure varietal wine from fruit grown to unirrigated vines planted in 1973. The quintessential High Pyrenees Shiraz style, full and delicious, round and distinctively soft.
Redbank Winery was established in the central Victorian Pyrenees in 1973 and has been listed in Langton's Classification of Distinguished Australian Wine since the catalogue's inception. The unique combination of soil type, cool to mild climatic conditions and traditional culture, dry grown vineyards produce low yield grapes of high intensity, colour and flavour in the classic Pyrenees style. Vines are planted to alluvial gravels over rich friable red clay soils at an altitude of 420 metres, yielding grapes which produce a wine of wonderful complexity and depth. The distinguished Sally's Paddock site contributes an exceptional component of unirrigated, superior single vineyard fruit to this handcrafted wine.
TASTING NOTES
A beautiful deep violet colour. The aroma of lovely Pyrenees varietal Shiraz dominates, wild cherries and violet, licorice and oak. A smooth, even texture is the hallmark of Sally's Hill, a rich and intense middle palate, yet at the same time, velvety and approachable, black cherries and plum, white pepper and some spice are married with seamless oak to create a complete and balanced wine with a lingering, lifted, savoury finish.

The Sally's Paddock Wineworks were established by Neill and Sally Robb in the Pyrenees region of Central Victoria in 1973
Sally's Paddock is a distinctly Australian winemaking and culinarily focussed estate, named after the small town situated three kilometers to the north, two hours north-west of Melbourne at the heart of the Pyrenees rangea. Sally's Paddock has established a reputation for producing wines of excellent quality, consistency and value. Neill and Sally originally planted the estate to Cabernet Sauvignon, Shiraz, Cabernet Franc, Merlot and Malbec, today there are forty five acres under vine, producing extremely high quality grapes.
