Inspired by the complex and eclectic styles, famously originating from the Shiraz grape's spiritual home within the diverse appellations of Vallee Rhone. In true stylistic authenticity, Mourvedre, Viognier and Marsanne add a further element of intrigue. Complex and traditional winemaking methods are employed to craft this most extraordinary, some would say most eccentric of Yarra Valley reds. The internationally renowned Dry Red No.2 is perpetually fine tuned as the team adjust the proportions of fruit to the performance of vintage.

Vines are pruned to yield no more than two tons to the acre. Founder Dr. Carrodus always aimed for a consistency of quality through a program of obtaining optimal ripeness of fruit each year. The dry farmed vines are hand harvested into small plastic buckets. Vinification begins within two hours of picking, as fruit is passed through an antique Amos crusher and destemmer, into specially designed one ton stainless steel lined fermenters. Approximately a third of components are kept on skins for three weeks maceration before being transferred to barrel for ferments. Dry Red No.2 is matured in nothing less than the finest quality, exclusively French oak barrels.
