The Yalumba philosophy quietly encourages innovation, experimentation and a visionary outlook in the quest to make great wine. Yalumba operate a vineyard nursery for the express purpose of developing techniques for the optimal husbanding of rare and unique varieties and clones. Vermentino is predominantly sourced from vineyards which have been trained specifically for this style of wine. Grapes are picked throughout the cool of night to maximise freshness before being crushed and de-stemmed for a period of skin contact. Parcels are pressed, the juices cold settled and fermented cold to retain freshness. Two months of post ferment lees mixing has added texture and improved middle palate weight.
