Filippo and Maria Casella emigrated to Australia bringing with them their know how of Italian varietal wines acquired after several generations of grape growing and winemaking in Italy. Fashioned from the best batches of Pinot Grigio grapes available to [yellow tail], the fruit is gently whole bunch pressed to retain maximum freshness and flavour. Free run juices are then cold fermented after inoculation by select aromatic yeasts. Once completed, the wine is cold stabilised and cold filtered to retain rich aromas and freshness. Yellow Tail is estate grown, vinified and bottled, ensuring that the final wine is handled to the most exacting standards from the vine to the glass.
