They take Sauvignon Blanc very seriously indeed, and have taken a trip across the Tasman to appropriate parcels of Marlborough grapes which bring distinctive vitality and zing. It's what makes [yellow tail] happy. A mostly Australian Sauvignon Blanc with a choice component of New Zealand fruit. Grapes are harvested at night to ensure the berries retain maximum freshness and flavour. Bunches are crushed and inoculated to select yeasts, using only the quality free run juices. [yellow tail] is vinified at low temperatures in controlled fermenters before it is stabilised and clarified, followed by an immediate bottling to retain all the lively characteristics of ripe, pungent Sauvignon Blanc.
