A noble rot Eiswein grown to the inhospitable climes of Niagara Peninsula, where the fruit is painstakingly hand picked under the most severe conditions. Classic botrytised Riesling characters, elegant citrus flavours of developed limes and grapefruit as well as ripe apricot and peach, followed by a slight mineral edge. Inniskillin Niagara is an outstanding experience, a superb and devastating wine, a gift from mother nature to wine enthusiasts everywhere, traditionally served chilled, alongside the most elegant nibbles and all fine faire.
Inniskillin is one of the great Noble Rieslings, Jack Frost's gift to the wine world. Harvested at the pinnacle of Canada's crisp winter, the grapes are naturally frozen on the vine and picked when the temperature drops to below 10C. Grapes are left on the vine well into December, harvested in a frozen state, most often in the middle of the night. Only a few drops of luscious nectar can be squeezed from each bunch, which is then expertly guided through fermentation to achieve the rich and rewarding experience known as Icewine. The ripe berries are dehydrated through constant freezing and thawing, a process that concentrates and intensifies the flavours, giving ice wine its immense complexity. Alcohol 9.0%
TASTING NOTES
Golden yellow hues. Sublime aromatics, sweet with bracing acidity and a tightly wound character that pulses through the long finish. On the palate there are myriad flavours of tropicality, stonefruits and red currant, citrus, apple and pears. An enticing expression of sorbet characters, a complexity of cinammon strudel, almond frangipan and tangerine. A racy interplay of sweet and tart offer up echoing flavors of lemon peel, candied apricots and lime.

Inniskillin's vineyard is called 'Brae Burn' a name of Gaelic origin which translates literally as 'hill stream' referring to the Niagara Escarpment and River. The historic Brae Burn Barn, constructed in the mid-1920s, houses the winery boutique. The main floor consists of the retail wine boutique and tour centre, while the upper level loft, maintained in its original open-beamed structure, features a training centre and demonstration kitchen for guest chefs, and a gallery.
