A splendid, easy drinking Chardonnay, by one of our nation's most accomplished winemakers, Yellow Tail is designed for immediate enjoyment. A regimen of luxurious winemaking techniques are employed, maturation on yeast lees, malolactic ferments and oak treatments are all part of the program to impart creamy, nougat flavours, add richness and balance the acidity. Ideal alongside the finest faire, [yellow tail] will perfectly compliment fresh seafoods and meat salad, game and poultry, cheeses or pasta. Serve nicely chilled, drink and enjoy.

After selling fruit from his farm to local wineries, Filippo Casella decided in 1969 that it was time for a new generation of Casella to put it's own winemaking skills to use, Casella Wines was born. Yellow Tail is the nation's oenological ambassador, a label built up around the international thirst for all things Australian. Yellow Tail are endowed with a wide expanse of vineyards in the Riverina from which to source the finest Chardonnay. Fruit is gently pressed to retain maximum freshness and flavour. Free run juices are cold fermented with select yeasts, the wine is lightly oaked, clarified and estate bottled.
TASTING NOTES
A golden straw hue. Ripe peach and melon aromas, sweet oak nuances. The palate is fresh and approachable, citrus and honeydew characters are complexed by the gentle influences of ageing under oak. A soft yet fresh, food oriented wine with balanced acidity and soft creamy finish. A match to crispy skin chicken, white meat sausages or paella.

About the Yellow Tail Winery
The Casella family has been making wine in the Riverina since 1965
Filippo and Maria Casella emigrated to Australia bringing with them their know-how acquired through three generations of grape-growing and winemaking in Italy. Recognising the potential of the region, Filippo purchased a farm in the town of Yenda, New South Wales. After selling the grapes from his farm to local wineries, he decided in 1969 that it was time for a new generation to put its winemaking skills to use, and the winery was born. Yellow Tail»
