From low yielding vines planted to the rich Terra rosa soils of Wrattonbully. Big on flavour and deep in colour with an intense aroma that displays classic spice and ripe berry notes supported by well integrated oak, Shiraz has long been a wine that Yellow Tail does best. Vintage 2003 claimed Australia's prestigious Stodart Trophy, 2005 picked up three significant trophies and six gold in competitions around the world, winner Best Red Wine Trophy at the Vienna International Wine Challenge.
The secret to Yellow Tail's sucess is quality, selection and strict adherence to the highest standards. John Casella hand selects only the best parcels for Yellow Tail. He looks for flavour, acid balance and colour. Casella's goal is to make premium quality, fruit driven red wines with the added complexity of ageing in fine oak, while maintaining the softness and drinkability of [yellow tail]. Shiraz is harvested off closely managed vines at Wrattonbully, crushed and transferred to a mix of oak barrel and fermenters for inoculation to choice yeasts. Upon completion of malolactic the wines are matured and assembled in a selection of new and seasoned oak barrels.
TASTING NOTES
Deep red colour. An intensely concentrated wine, initially revealing aromas of ripe cherries, blackberries, chocolate and mocha. Delving deeper into the complex bouquet, cracked pepper, spices and sweet oak. The soft vanilla character on the nose leads onto a full palate crammed with ripe fruits. Seamless and well structured, complementary mocha vanillin notes derived from maturation in American oak.

The Casella family has been making wine in the Riverina since 1965
Filippo and Maria Casella emigrated to Australia bringing with them their know-how acquired through three generations of grape-growing and winemaking in Italy. Recognising the potential of the region, Filippo purchased a farm in the town of Yenda, New South Wales. After selling the grapes from his farm to local wineries, he decided in 1969 that it was time for a new generation to put its winemaking skills to use, and the winery was born. Yellow Tail»
