Grapes are picked at the onset of fruit ripeness, throughout the cooler parts of day to preserve quality and ensure minimal colour is extracted during the press. All parcels are separately handled to preserve their unique character, over forty components are assembled into the final Cuvee. Chardonnay provides flavour and intensity at the front of palate. Pinot Noir contributes weight, focus to the back palate and persistent creamy finish that is the defining quality of Vintage Chandon. Chandon is disgorged and doseaged after an extended lees ageing, followed by a rest in bottle before release, infusing additional complexity into the aromas, while enhancing flavour and building creamy texture.
