Fashioned to the French Doux style, a cépage of Chardonnay which brings creamyness to the palate and contributes structure. Pinot Noir adds middle palate dimension with hints of cherry and spice. A richly cake textured palate, warm and fruit driven, with a tingling acidity that cleans and refreshes. Superb as a richer style of aperitif, an accompaniment to canapes, a splendid dessert wine, it mates perfectly to quince tart or wet ripe cheeses, the perfect every occassion wine for those who appreciate the sweeter things in life.
Chardonnay, Pinot Noir and Meunier are sourced from a range of cool climate viticultural sites, including Strathbogie, Upper Goulburn, King and Yarra Valleys. Grapes are gently pressed and vinified separately. When the primary and malolactic fermentations are complete, components are settled and stabilised for assemblage. A component of reserve wines from previous vintages are included, enhancing the complexity and structure. A small amount of sugar and cultured yeast is added before the wine is bottled and sealed under a crown seal for fermentation in bottle. After ageing on yeast for a minimum of thirty months, the bottles are riddled and disgorged before disgorgement and dosage liqueur.
TASTING NOTES
Pale gold straw, creamy, persistent mousse. Enticing aromas of guava, ripe tropical fruits, vanilla and dried apricots combine with complex notes of cashews and brioche. A soft and opulent front palate leads seamlessly into a mid palate offering dried fruit and yeast derived savoury creaminess. The complexity is enhanced by liqueur doseage, for a richer more exciting wine exhibiting lovely balance between toastyness and fruit.
