When Dr Peter McMahon planted the first vines at Seville Estate in 1972, it marked the rebirth of Yarra Valley viticulture. Barber are the entry level to Seville's superlative range, hand crafted to classic Burgundian techniques. Four decades of the Yarra Valley's most inspiring Pinot Noir have consolidated the style and ensconced Seville as a leading marque in Yarra Valley. The aim is to create an earthy, elegant style with gamey, toasty flavours. Low cropping levels ensure the intensity of fruit flavours, maturation in French oak contributes refined complexity.
Seville Estate is a very personal expression from a unique site. Situated on a ridge of red volcanic soil overlooking the upper Yarra Valley, hidden from the well trodden tracks of the mainstream. Vines are all hand pruned and substantially dry grown, irrigation is only used when vines are under extreme stress. Fruit is hand picked and de stemmed into three tonnes open fermentation vessels. Musts are cold soaked for several days prior to addition of cultured yeast. Open ferments are hand plunged daily, batches are gently pressed off skins and run straight to French oak for malolactic and maturation on lees. Seville is naturally clarified as it ages, minimal handling preserves delicate Pinot flavours.
TASTING NOTES
Bright ruby colour. Cherry spice bouquet, gamey, earthy nose. Delicate strawberry and cherry characters backed by toasty oak. The palate is textured and complex, endowed with a seductive richness, tempered by stalky savouryness. The finish is elegant and balanced, fine velvet tannins in support of balanced acidity. Enjoy alongside roast or grilled duckling, confit or marinated game.

By the end of the decade Dr McMahon and his wife Margaret, along with producers such as Mount Mary, Yeringberg, Yarra Yering, St Huberts and the like were fashioning wines that served to re-establish the lofty reputation the Yarra Valley had enjoyed in the 19th century. From its first vintage, Seville Estate quickly established itself as one of the Yarra Valley’s finest producers. Surprisingly in a region more renowned for its red wines produced from Cabernet and Pinot Noir, it was the Seville Estate Shiraz that received the most attention, quickly becoming one of Victoria’s most sought after wines.
